To cook Methi Papad, fenugreek seeds are required which are cooked with Papad, mingled in a spicy curry.



Methi or fenugreek seeds have medicinal properties, an especially relevant thing is their iron values. It’s also a natural coolant for a human body. Generally, only a handful (few spoons) seeds are enough for making this dish. Though bitter, we all know bitter is healthy for the body. That’s why bitter gourd curry is something we relish. So let’s take a quick look at the ingredients and the method to cook Methi Papad.

How to cook Methi Papad

 

The total time to cook Methi Papad can take maximum 1 hour 10 mins. It includes the Soaking time: 30 mins and the cooking time another 30 mins.

Ingredients

1 cup Soaked fenugreek seeds

1.5 tsp Red chili powder
1 teaspoon Turmeric powder
1 tsp Coriander powder
3 tsp Sugar
½ tsp Asafoetida
As per taste Salt
4-5 Coriander leaves
2-3 tbsp. Mustard oil
3-4 Papad
2 tbsp. Lime juice

For Garnish:
Roasted papad
Mint leaves
Coriander leaves.

Method

Heat the water In a pan and boil fenugreek seeds. You can soak the seeds for 30 mins and then drain it well.
Take another bowl, add red chili powder, turmeric powder, coriander powder, sugar, and water. Now prepare a paste.
Now add salt and finely minced coriander leaves in the boiling fenugreek which has fresh water(1.5 cup).
In another pan, heat mustard oil.Add the masala paste, boiled fenugreek water, and cook.
Next, add lime juice and roasted papad.
Garnish the curry with papad, mint leaves, and coriander leaves.
Methi papad is ready to serve.

Tips:

To eliminate bitterness, you can replace fenugreek seeds with half cup fenugreek leaves. Add them when you’re gonna place the paste with boiling water. Sauté for 2 or 3 mins and follow the same method as discussed.

How To Cook Chicken Chaap In Kolkata Style

Chicken chaap is an Awadhi dish and it was first introduced to Bengal by the Nawabs during the eighteenth century. Due to its powerful flavors, it didn’t take long to get the respectable position among the food lovers of Bengal. Almost all of the Mughlai food joints in Kolkata such as Arsalan, Aminia, Shiraz etc. are quite popular for their Chicken Chaap dishes. In case you are a Mughlai cuisine lover, this is an absolutely must-try recipe. To cook chicken chaap, you need to just follow some steps properly with some essential ingredients.



But before jumping into the recipe, I should tell you some important points regarding it. Here the leg pieces and giant chunks of the chicken are firstly marinated with yogurt or sour curd(Tok Doi) and some spices. After that, the frying and the cooking are done. Spices are most noteworthy parts to cook chicken chaap due to the fact that it’s a rich aromatic cuisine with thick gravy. Hence spices are very much important both in quantity and the method of preparation. The original recipe incorporates ghee as the medium of cooking. Though only oil is okay, just add a little ghee to it for flavor. If you are okay with probably more richer version, you can add more ghee.

Ingredients such as poppy seeds, cashew paste, ‘kewra water’ or essence (an extract that’s distilled from pandanus flowers, is used to flavor meats) and garam masala are especially relevant for this dish. Only small quantity of kewra essence is okay due to its strong aroma.

Ingredients :

 

To cook chicken chaap, go through all the ingredients and collect everything from stores. The absence of any one can tamper the taste.

1.Chicken – Around 1 kg cut into big chunks, probably in 4 leg quarters (serves 4)

2.Greek Yogurt( or Sour curd) – 1 cup
3. Onion – 1 big chopped
4. Garlic paste – 1 or 1/2 tbsp

5.Ginger paste – 1 tsp
6. Kashmiri Red Chili Powder – 2 tbsp
7. Red Chili powder – 1/2 Tsp or as per your taste
8. Coriander powder – 1 tsp
9. Poppy seeds – 2 tbsp
10. Whole Cashew – 15 pieces

11. Cardamom – 4
12. Cinnamon – 1 inch
13. Clove – 4
14. Javitri (Mace ) – 3-4 blades
15. Star anise – 1
16. A pinch of Sugar
17. Oil(4 tbsp) + Ghee( 2 tbsp)
18. Kewra water – few drops
19. Salt as per taste.

Method :

 

To cook chicken chap, preparation time takes longer. You must keep the marinated chicken for at least four hours. Hence, you can start preparing at the earliest.

1.At first, take all the dry spices like cardamom, cinnamon, clove, mace and star anise and dry roast them. Cool them down and grind it. It must be converted into powders. Keep it aside.

2. Now take a big pan, add oil and wait until it gets hot. Once the oil is ready, add the chopped onion and saute it lightly until it gets light golden brown. Turn off the gas/induction. After it gets cool, place all the onions in a blender so that you can make a paste.Soak the poppy seeds and cashew in half cup of water for 15 mins.

3.Soak the poppy seeds and cashew in half cup of water for 15 mins. Now make a paste in the same manner.


4. Finally, it’s the time for the chicken. Rinse properly with clear water and place all the chicken pieces in a large bowl/vessel. It’s time to pour the yogurt, the onion paste, garlic paste, ginger paste, Kashmiri red chili powder, coriander powder, red chili powder, salt, sugar, the poppy seeds and cashew paste. Now mix all these properly. At this time, you can add a pinch of corn flour or plain flour for avoiding the curdling from yogurt. Keep it like this for 4-6 hours.

5. Add oil and ghee to the pan and wait until it gets hot. Now add the chicken pieces from the marinade to the hot oil. Saute the chicken pieces with light hands for few minutes. Next pour the rest of the marinade too. Stir it periodically and cook chicken chaap over medium to high flame. Don’t forget to cover it with a lid. After few minutes, remove the lid and stir until the oil comes up from the sides of the pan. Let the chicken pieces soak all the flavors and be tender.


6. Taste the mixture, add half to one tsp of the garam masala. Finally, add few drops of kewra water. Stir again and mix it properly. Chicken Chaap is ready to be served hot with Biryani, Naans or tandoori rotis.

How To Cook Bhapa Ilish Or Steamed Hilsa

For Bengali community, the catfight between Hilsa(Ilish) and Prawn (Chingri) is a well-known thing. Hilsa is considered as the signature dish of Bengalis who came from East Bengal or Bangladesh. So in the opposite, Prawns are representative of ‘Ghoti’ or Bengalis with an inheritance of West Bengal. Hilsa is rich in fatty omega-3. Hence quite good for health. It can be prepared in several ways, fried, steamed, curry and so on. But the steamed Hilsa is the most noteworthy and popular dish which is cooked with mustard paste and mustard oil. While traditional ladies cook Bhapa Ilish in a stainless tiffin box, modern kitchens have oven and pressure cooker for their convenience. And it seems both are equally great.

 
Ingredients

To cook Bhapa Ilish or steamed Hilsa, here are the necessary ingredients.

Hilsa fish: 5 or 7 pieces

Black Mustard seed for paste: 4Tsp.(soaked in lukewarm water)

Poppy seed/posto: 1.5 or 2 Tbsp.

Salt to taste

Green chili:5or 7

Turmeric powder: 1Tsp

Red chili powder: half (½ Tsp optional)

Sour curd or Tok Doing: 4Tbsp

Coconut: 2 to 3 Tbsp (Either grated or powder)

Mustard oil: 4-5 Tbsp

 

Method

 

  • For Marination

1 Firstly, a thick paste has to be made of Black mustard seeds (Shorshe Bata). You can prepare it either with traditional ‘Silnora’ or with a grinder. Seeds are soaked and now put the 2 tablespoons of mustard seeds (shorshe), with a pinch of salt in addition to 1 green chili for paste. Keep it aside.

2. Take poppy seeds (posto) and make a separate paste.

3. Finally, take the clear fish pieces, rub them with half teaspoon salt and turmeric powder. Leave for 10 mins.

 

  • Prepare Marinated Fish For Steaming

 

1.At this point, take a bowl. Put the Mustard paste, poppy seed paste, some grated coconut (or coconut powder), Sour curd or yogurt, ¼ teaspoon turmeric powder and red chili powder (optional) and a pinch of salt. Finally, add 3 Tbsp of mustard oil to it. Mix these ingredients properly. This is the mustard sauce which is essentially important for this preparation.

2.Check the salt as we have used salt previously while rubbing the fish with mustard paste. Now add a cup of water to the mixture.

To cook Bhapa Ilish, you can use either pressure cooker, oven or double boiler.

 

  • Cooking

1.Take a stainless steel tiffin box or a microwave oven competent bowl. The box has to possess tight lid. Rub or brush some mustard oil in the box.
2. Add some mustard paste which is already prepared.

3. Place steaks of cut fish pieces in a single layer.

4.Spread the prepared mustard sauce over it so that it covers all the fish pieces adequately.

5. Put 3-4 slit green chili on the top of fish pieces. Finally, drizzle 1 teaspoon of mustard oil on them. Cover the lid.

 

  • For Oven

You can prepare this much of the dish according to the above-mentioned process. Now for microwave, add aluminum foil and place the bowl/container into a deep vessel. Add 5 cups of water and cook in high temperature for 5 mins and then at 40% temperature for next 25 mins.

Or you can simply bake at 375 F for 25-30 mins.

While baking, you can remove the cover after 10-15 minutes. For the next 15 mins, let it bake open.

  • For Pressure Cooker

1.Spread a pressure cooker safe box with little mustard oil.


2.Put the fish pieces in the bowl in one single layer. At the same time, apply the prepared mustard sauce over fishes nicely. Follow the same process of adding 3-4 slit green chili on the top. Finally, pour 1 teaspoon mustard oil on them.

3. Add 5 cups of water in the cooker and place the steel box safely on medium flame.
Cook in a pressure cooker for 2-3 whistles.

You can cook Bhapa Ilish, following the same way while in Handi or vessel for 20-25 mins. At first with a high flame and then at low flame.

Your steamed Hilsa or Bhapa Ilish is ready to serve with steamed rice!
